Learn how to make incredibly delicious, nourishing and comforting Chicken Congee with our chef Tarika Singh<br /><br />One of the best food when sick, Chicken Congee is a nutritious and protein-rich recipe made with Rice, Chicken and garlic-chili oil. Names for congee are as varied as the style of its preparation. Despite its many variations, it is usually a thick porridge of rice largely disintegrated after prolonged cooking in water. <br /><br />Ingredients for Garlic-Chilli Oil:<br />(Serves 2)<br />- 1/4 cup Oil<br />- 5 Cloves Garlic <br />- 2 tsp Chilli Flakes <br /><br />Ingredients for Congee:<br />- Shiitake Mushrooms(soaked)<br />- 1/2 cup Basmati Rice(soaked)<br />- Button Mushrooms<br />- 1 1/2 piece Ginger(chopped)<br />- Spring Onions(green)<br />- 300 gms Chicken(breast & leg piece)<br />- 2 cups Water<br />- 1 1/2 cups Mushroom Water<br />- Salt <br />- White Pepper Powder or Regular Powder<br />- 1/4 tsp Toasted Sesame Oil<br />- Spring Onions(green)<br />- Fried Onions<br /><br />Method:<br />1. In a saucepan heat oil and in a small jar add finely chopped garlic, chilli flakes <br />2. Once the oil is hot, pour it in the jar of garlic and chilli flakes and keep it aside<br />3. Take basmati rice and put it in the pressure cooker<br />4. Now, add shiitake mushrooms, button mushrooms, chopped ginger, spring onions, chicken(seasoned with salt & pepper), water and mushroom water to the pan <br />5. Add little salt and white pepper powder to the pan <br />6. Mix all, making sure chicken gets flavored and it is submerged completely in water <br />7. Now close the lid and let it cook on a high flame for 5 whistles <br />8. Open the lid, pull out the chicken and keep it aside <br />9. Stir the congee in the cooker, so it gets a good thick texture <br />10. Now, with clean hands start shredding the chicken <br />11. Add some of the shredded chicken in the cooker and stir it up<br />12. Take toasted sesame oil and add to the congee <br />13. Take out the congee in a serving bowl and garnish it with spring onions, fried onions, garlic-chilli oil, and some shredded chicken
